Oh and night would be the period of darkness between dusk and dawn. Though I have seen it legally defined as 21.00 - 06-00 for the UK.

It depends on your definition of 'morning'. Taking the OEDs definition then 01.00 is not morning; it falls under the classification of night.

If you want specific time cut-offs for each 'period' then I think you will have to look to law for that kind of definition.
