I'm just asking because I have always seen advice given in the forums regarding stores. Sellers need to have stores so buyers can view items easier and so far I just can't realize how a store helps a buyer navigate a sellers items easier than how I just searched Spot50's items.
I have no knowledge of search engine optimization other than as a novice.I would have thought that the more "instances" of a search term then the better that result would show.
Another point is that someone might just do a store search rather than a general search.
Unless we can get into the head of the searcher we'll never know the answer to the question of "How can I ensure someone buys my product?!

Shops are a huge help to buyers - often the ebid categories are fine for items in general but, for example Postcards>Art is a bit much whereas my shop cats show clearly that I have a number of pre-Raphaelite cards - saving a buyer from searching for each artist individually.
I divide Postcards>Art into 11 categories not to mention categories for inidividual artists where I have more than 10 items by one person in stock.

So we can create our own categories for our stores or do the categories remain the same?

Ebid categories are static, and as you see when you choose a category for a new listing. Inside your store, you can call them whonkydonks if you want, and subdivide into ancient, bizarre, and overpricedd whonkydonks. Oh....don't forget the blue ones.
