Was wanting a sponge pudding after dinner tonight, but didnt fancy waiting for it cooking, so stumbled across the recipe below.
Including time to mix the ingredients, and cook it, it was done in under 10 minutes.
I must admit - when i put it in the bowl for the microwave - I didnt believe it would work.
The comments under the recipe are true - probably one of the best sponges puddings i have had.

Jam works in place of the syrup too - just spoon a couple of blobs of jam instead of the syrup, the micro melts it down. Chuck some raisins in for a lighter version of spotted dick, cocoa powder or hot chocolate powder for choc pud.
My mum taught me this recipe when I lived at home. We have pyrex cups that we keep specifically for emergency puddings - the mix divvys up into 4 cups, a couple of mins in the micro and ping. Boil the kettle at the same time, remove the jar of instant custard from the cupboard and presto - desert in no time with no effort :D
Cocoa powder or drinking chocolate in the instant custard for chocolate custard, or another muvva tip - blancmange mix - just pour it on instead of chilling it - chocolate, strawberry, banana custard...........

I tried honey once, I wasnt keen, it didnt "hold" as well as syrup. Each to their own though, you might like it!! :)

Well it is a new adventure for me... so am using what I have in the cupboard... Honey not syrup.
Course if it doesn't work I'll pick some up next time I'm in town...
I'm using the honey from the bees out by the blueberry bushes. That honey has a distinct blueberry flavor to it... Might throw in a few dried blueberries too

I thought about doubling it in my first attempt tonight, but there was no need.
It would be more than enough for 3, and was certainly more than enough for the two of us.
Just for info - it re-heated very well in the microwave a couple of hours later when wanted to finish it.
Am gonna try it with rasins in it tomorrow, and cover it with thick cream when it is ready!

Can feel my butt getting wider by the minute....
I never tried any pudding like that before. My family gobbled it all up in one go while it was still hot. How is it cold?

Got this off a cooking website
What is a good substitute for eggs?
2 tbsp cornstarch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.
1 tbsp milled flax seed and 3 tbsp water = 1 egg. Light, fluffy cakes!

Thanks, but I'd be amazed if any of that gives a sponge-like finish - there's no raising element. But a kind thought. :)

I'm intolerant of albumen... I haven't yet dared experiment with duck eggs to see if there's any difference, but one day when I've nothing else to do, and nowhere to go... ;)

Delicious!!! The syrup at the bottom isnt as runny - almost toffee like.

I made this last night with our dinner (dessert) but used my own plum conserve instead of treacle. It was soooooooooooooooooo easy to make and soooooooooooooooooo delicious. In fact, it was so good, even my hubby (who normally doesn't eat such stuff) complimented me on how good it tasted, even had 2nd helpings! :D
As a previous poster mentioned, it warmed up nicely in the microwave and I had the rest this morning for my breakfast :)
